All passengers on the same booking need to be on the same itinerary and fare class so you will not get 3 passengers with different return date on one booking.

In backend JEM general settings you choose on the right under event registratons>yes or better use event menu and save. Then you create the event in frontend or backend. In frontend is the extended tab for event registrations, there are more settings, you can use.
